Head Chef Notes

This month we have tried to cut out sugar in our eating. I know I've talked about healthy eating a lot but this is one more step we are taking at our house to work toward being healthier people. It is amazing how much sugar is in everything we eat even ketchup, mayonnaise, cereal, and on and on. What it has boiled down to is cutting out all processed food and anything that comes in a convenient little package (box).

Now I also love to cook and bake so that has created a few changes that we are still getting use to. I've been replacing wheat flour for white flour and brown rice for white rice. However we've reserved Sundays for a free eating day, i.e. dessert!

A few things that have gotten me on the healthy eating kick is finding the website, www.savingdinner.com Now I know what is healthy and what is not but I still love chocolate and baking yummy treats! However Leanne Ely is a nutritionist that helped me see how important it is to get rid of those extra ingredients in our diet that we can't pronounce.

Here are a few things I have learned from www.savingdinner.com:

  • White sugar can become an addiction.


  • Add pureed lentils or beans in your cooking. I've tried this several times when mixing pancakes this month and it works really well with lentils. See recipe below.


  • Nitrates are in luncheon meat including deli meat that isn't good for us and especially not our kids! Too bad, I love ham ={


  • Leanne Ely from www.savingdinner.com has great menus to help the family meal time, a podcast that is where I've gotten a lot of great information and a free newsletter full of some great ideas also.



    Another help in the right direction was the authors of Real Food for Healthy Kids sending me a free copy of their cookbook. It has some great down to earth recipes that we have tried this month.

    Healthy Kids Recipes

    Never Know There's Lentil Pancakes
    1 egg
    1 Cup milk
    2 Tablespoons applesauce
    1 cup wheat flour
    1/2 teaspoon salt
    2 Tablespoons baking powder
    2 Tablespoons sugar
    1/3 cup cooked lentils
    1 small carton of yogurt
    In blender add all ingredients. Blend together and cook on a hot griddle.

    Get the Morning Started Right Smoothie
    1 mango peeled and sliced
    2 cups frozen strawberries
    1-2 cups milk (depending on if you like yours thicker or thinner)
    1 carton of peach or other flavor yogurt
    Blend all together in blender. Start with 1 cup milk and if it is too thick for you add 1/2-1 cup more milk.
