Head Chef Notes

What a summer. I hope you've been busy and enjoying yourself as much as we have. Now that we've had a great vacation, visited family and played at home it is time to get back to a normal schedule again.

My thought for this month is my new website http://www.kids-meal-ideas.com. (the third and last one!) The easy kids meals section on kids-cooking-activities.com was getting so big I've branched off on a whole new site.

This is where you can share your kids meal recipes, menus and ideas and help other moms and dads. I've just finished this week a page (just in time for school) on kids lunch recipes and I've included how I try to make packing lunches and feeding kids a little easier. Check it out and share with everyone your ideas! I'd love to learn (as well as all the readers) what you do at your house.

  • My Favorite Summer Recipe


    This summer I discovered this recipe and really love it as well as the kids.

    Grilled Lime Chicken Salad
    1 lb. boneless chicken cut in strips
    1/3 cup olive oil
    2 limes juiced
    1/4 cup white wine vinegar
    1 teaspoon yellow mustard
    1 clove garlic, minced
    1/2 teaspoon seasoning salt
    1/4 teaspoon pepper
    In a ziploc bag add oil, limes, vinegar, mustard, garlic, salt and pepper. Add in chicken and seal shut. Marinate in fridge several hours. Grill.

    To make into a salad add:
    grilled chicken, cut in pieces
    black beans
    corn
    shredded lettuce
    shredded cheese

    My Summer Project

    One of many of my summer projects was to put the Kids Cooking Activities Ebooks in three ring binders making it easier to pull out and use. It may seem silly but I'm really excited about it! It is great to have all these organized in my kitchen.
