Its autumn time and with this time of year comes an abundance of pumpkins, apples and winter squash. Winter squash are high in Vitamin C, A, potassium, and dietary fiber. Want to learn more about winter squash?

Traditionally when you think of winter squash you think of pumpkins. Recipes such as pumpkin pies, pumpkin bars, pumpkin cookies are super yummy but try some healthy winter squash versions below. If you have a favorite pumpkin recipe or winter squash recipe please share it! I'm on a mission to find great squash recipes this month.

When teaching kids about winter squash take them to a pumpkin patch, market or grocery store. Find the following varieties of squash and let them choose which one they'd like to try.

  • Acorn
  • Butternut
  • Turban
  • Spaghetti
  • Hubbard

    Winter Squash Recipes

    Roasted Butternut Squash
    1 butternut
    Olive oil
    Have an adult cut squash in half lengthwise. Scoop out seeds and strings. Place on a tin foil lined baking sheet. Drizzle with olive oil. Season with salt and pepper. You can also season with Italian seasoning or basil. Bake at 350 degrees for about 1 hour or until you can poke a fork in the squash easily. Scoop our flesh from squash. Eat as is or use in baked goods, add to pancake batter or casseroles.

    Sugar Baked Squash
    1 medium acorn squash
    1 tablespoon butter
    2 tablespoons brown sugar
    Cut squash in half and scoop out seeds. Place in baking dish. Spread with butter and sprinkle with brown sugar. Bake at 350 degrees until you can poke a fork in the squash easily.

    Chicken, Squash and Rice Casserole
    1 (6 1/2-ounce) package chicken flavored rice mix
    2 cups butternut squash, cut in small cubes
    1 zucchini, cut in small cubes
    1 red bell pepper, chopped
    4 chicken breast halves
    2 cups water
    Brown chicken in skillet. Set aside. In casserole dish add cubed squash, chopped zucchini and red pepper. Stir in rice and seasoning packet. Add 2 cups water. Then place cooked chicken breasts on top of rice mixture. Bake at 425 degrees for 30 minutes until water is absorbed.

    Pasta and Squash
    4 cups cooked angel hair pasta
    4 cups peeled and cubed (1 inch) butternut squash
    2 Tablespoon Italian seasoning
    Olive oil
    Parmesan cheese
    Drizzle cubed squash with oil and Italian seasoning. Sprinkle with salt and pepper. Bake at 400 degrees for 40 minutes until tender. Meanwhile cook pasta and drain. Toss hot cooked pasta with cooked squash and sprinkle with Parmesan cheese.

    More Winter Squash Ideas

  • Add cubed or julienned squash to soups, stir fry, pot pies.
  • Make cooked butternut squash into a cream soup.
  • Add ½ cup pureed cooked squash to pancake or waffle batter.
  • Stuff squash with chopped apples and bread stuffing such as stove top or a homemade version.
  • Cube squash and roast in the oven with Brussels sprouts, carrots or other vegetables. Drizzle all vegetables with olive oil and season with salt and pepper. Bake at 375 degrees until tender.
