Fun Kids Dessert

Older kids can do this all themselves while younger kids will be able to add ingredients, stir and drop onto cookie sheet.

No Bake Scidaddle
2 Cups chow mein noodles
2 Cups mini marshmallows
3/4 Cup sugar
1/2 Cup milk
2 Tablespoon butter
6 oz. semi sweet chocolate chips
In large bowl add chow mein noodles and marshmallows. Set aside.
In saucepan add sugar, milk and butter. Stir and bring to a boil. Let the mixture come to a rapid boil. Take off stove and add chocolate chips. Stir until melted. Let stand 15 minutes. Pour over noodle mixture and stir until well coated. Drop onto a buttered cookie sheet or line a cookie sheet with wax paper. Chill in fridge.


Cook'N for Kids software


We have this kids cooking software and we really enjoy it. I love the fact that the kids learn a lot about cooking from what ingredients are to nutrition facts.
This CD also has lots of recipes to try, cooking definitions and a cooking game section.

See the link below for an article I wrote about The Basics Of Healthy Food Vs. Non-Healthy Food. Every little bit helps when it comes to teaching kids to eat healthy and be healthy.

I just made this yesterday and it is a big hit at our house. (I didn't have shredded coconut or walnuts so just used raisins and it turned out great.)
Coconut Pumpkin Bread
3 ½ cups all-purpose flour
2 cups packed dark brown sugar
2/3 cup white sugar
1(15 ounce) can pumpkin puree
l Cup vegetable oil
2/3 cup coconut milk (can use plain milk coconut makes the bread moist)
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground nutmeg
1 ½ teaspoons ground cinnamon
2/3 Cup flaked coconut
1 cup chopped walnuts, toasted
1 Cup raisins
Preheat oven to 350 degrees. Grease and flour two loaf pans. Combine flour, sugars, pumpkin, oil, coconut milk, baking soda, salt, and spices. Mix until well blended. Fold in coconut and nuts. Pour into prepared pans. Bake for about 1 hour or until a toothpick comes out clean. Remove from oven. Cover with foil tightly, and allow to steam 10 minutes. Remove foil and turn out onto cooling rack. Tent lightly with the foil, Allow to cool completely. This tastes even better the next day.

Beef Barley Soup an Easy Kids Meal

We just tried this at our house and it really turned out well. If your kids like rice try using recipes with barley such as this one.

Beef Barley Soup
1 pound ground beef
1 onion chopped or pureed in blender
2 teaspoons oregano
1 large can of tomatoes, pureed in blender
4 Cups beef broth
2/3 Cup barley, uncooked
small package frozen mixed vegetables
Brown beef with onion. Season with salt and pepper and add oregano. Drain meat and add to a soup pan. Add pureed tomatoes, barley, and beef broth to pan. Cook for 15 minutes on medium heat. Add mixed vegetables and cook 5 minutes or until vegetables are tender. **Try making homemade biscuits or store bought to accompany the meal.

Simple Smoothies

This idea came from one of our readers...
I wanted to comment on "smoothies". They are so nutritious and fun to make. In a blender, I use oranges, apples, pineapple, bananas and blueberries or strawberries and blend them together.

One additional suggestion: Throw in some carrots, or celery or some other veggies and blend in with the fruits. It doesn't change the taste, just the color and children get their fruits and vegetables all at once. St. Patrick's Day is ideal for green smoothies. Just add celery, spinach or cabbage.

Thanks Terry, smoothies are also great for kids to make if they are younger they can easily add the ingredients to the blender and turn on the button with an adult supervising.
