Moroccan Food Recipes


Moroccan food recipes are becoming popular throughout the world. Morocco is known for tangines, mint tea, camel rides in the dessert and warm beautiful weather. Learn a little about the kingdom of Morocco and try some ethnic Moroccan recipes.



Common Moroccan Ingredients

fresh fruits such as dates, figs, pomegrantes, oranges, lemons, apricots, plums

Moroccan Facts

  • Morocco is located in the Northwest corner of Africa.
  • If you travel to the top North you can see the Rock of Gibraltar across the Sea.
  • Lions and elephants onced lived in Morocco but not anymore. Now you will find geckos, lizards, chameleons and snakes. As well as camels, sheep and Barbary monkeys
  • Morocco is a kingdom. 
  • Part of the Sahara Dessert can be found in Morocco and taking a camel trek through the desert is a big tourist destination.

Moroccan Food Recipes 

Zaalouk- Eggplant Salad

2 eggplants
3-4 tomatoes, fresh
moroccan dipsMoroccan zaalouk and hummus with bread

dash pepper
salt to taste
1 Tablespoon paprika
1 teaspoon cumin
4 garlic cloves
1/4-1/2 Cup olive oil
Wash and poke the eggplants several places with a fork or knife. Place on a cookie sheet and let roast at 400 degrees F/200 C for 1 hour. Allow to cool.

Another variation is to peel you eggplant and cut in cubes. Boil in salted water for 30 minutes.
If roasted eggplant, peel skins off and discard.

Chop eggplants and tomatoes in small pieces. Place in a saucepan. Drizzle with oil and season with pepper, paprika, cumin salt and add minced garlic. Allow to cook and saute 10-20 minutes. Taste and season more if needed. Traditionally this is served with slices of fresh loaf bread or pita bread.

Tangines are famous dishes usually cooked meat with vegetables and spices. It is cooked in a tangine dish or pot. It is usually cooked on top of the stove but can also be used on a campfire or inside the oven.

Chicken Tangine

tangine cooking1/4 Cup butter
1/2 teaspoon ginger
season with salt and pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon cumin
1 large onion, grated
1 pound chicken breasts or cut up chicken
1/2 - 1 1/2 Cups water
sliced and peeled vegetables such as potatoes, carrots, parsnips, etc.


In your tangine pot, dutch oven or large soup pan melt 1/4 Cup butter and saute your onion. Add in ginger, salt, pepper, cinnamon and cumin. Blend spices into the onion and butter. Add chicken pieces on top of the melted butter. Cook for 10 minutes then add 1/2- 1 Cup water, enough to cover the meat. Add chopped potatoes, zucchini or other vegetables you would like on top of the chicken. Put lid on and cook for 40 minutes.

Moroccan Food Recipes- Harira

This soup recipe is served during the holy month of Ramadan.

3-4 tomatoes
1 onion chopped or grated
2 Tablespoons butter
1/2 Cup fresh parsley, chopped
2 Tablespoons tomato paste
4 teaspoons salt
1 teaspoon ginger
several dashes pepper
1/2 teaspoon cumin
2 Cups garbanzo beans, soaked overnight and cooked until tender or 1 can drained
1/2 Cup dried lentils, soaked in water for 30 minutes-1 hour
1/3 Cup rice
8 Cups water
1/3 Cup flour
Puree tomatoes in a blender. In a soup pot saute onions in the butter. Stir in pureed tomatoes, chopped parsley, lentils, garbanzo beans, salt, pepper, ginger, cumin and water. Allow to cook for 30-40 minutes. Stir in tomato paste and rice. Allow to cook until rice is tender. To thicken your soup, take out a 1/4 cup of soup and add flour a little at a time. Whisk until smooth. Blend into soup and allow to cook until soup thickens.
