Chinese Tossed Salad

We love this salad at our house and it is a nice change from a traditional green salad. Have younger kids mix up the salad and an adult or teen chef cook the dressing.

Ingredients:
Iceberg lettuce
2 Cups cooked cubed chicken
1 Cup cashews or almonds
Small Can water chestnuts, drained
1 cup fresh or frozen peas, thawed
3 oz. can chow mein noodles
Mix salad ingredients together. Prepare dressing and allow to cool. Drizzle dressing over salad and toss to coat. Or serve dressing on the side. If adding your dressing to the salad make sure you serve immediately after.
Dressing:
1/2 Cup sugar
1 Tablespoon cornstarch
1/4 Cup water
1/4 Cup vegetable oil
1/4 Cup ketchup
3 Tablespoons cider vinegar
1 Tablespoon soy sauce
Add all ingredients to a saucepan and bring to a boil. Stir and cook 1-2 minutes.
