Blueberry Pancakes In a small bowl add the following ingredients. 2 cups flour 6 teaspoons baking powder 1/2 teaspoon salt 2 tablespoons sugar
In mixing bowl, blend together: 2 eggs 2 cups milk 2 teaspoons vanilla 2 cups sour cream or vanilla yogurt 4 tablespoons melted butter Add dry ingredients to mixing bowl and continue to blend. In a small bowl, add 1 cup blueberries, fresh, dried or frozen and 1 tablespoon flour. Stir to combine. This keeps the blueberries from adding too much moisture to the pancake mixture. Stir blueberries to pancake mix and cook on a griddle.
