Broccoli Bacon Frittata


Servings: 5-6

Ingredients:
1 Cup broccoli florets
3 large sized eggs
2-3 strips cooked bacon, crumbled
2 Tablespoons coconut milk
3-4 scallions, thinly sliced
Sea salt, to taste
Ghee
Ground black pepper, to taste
1 tomato chopped finely

Directions:
Preheat oven to 425 degrees Fahrenheit.

Steam the broccoli florets for 3-4 minutes until they turn soft. Set aside. Now grease an oven safe skillet with ghee and drop the steamed broccoli and the bacon in the skillet.

Toss the broccoli and bacon for a few minutes. Whisk the eggs with sea salt, coconut milk, black pepper and scallions and then pour the mixture directly over the broccoli and bacon mixture.

Pop the skillet into the hot oven and bake the frittata for 15-20 minutes or until it sets. Top with chopped tomatoes and cut into slices.
