In heavy duty foil pack include:

*1/4 piece of a ham steak

*1/2 cup, cut up sweet potatoes
(the thinner you slice them -- the quicker your meal will cook)

*1/2 cup green beans
(you can use fresh or frozen - whichever you prefer)

*butter
*garlic powder
*brown sugar

cook around 15 minutes -- until veggies are tender --

remember, you can always increase the veggie portions

ENJOY!

please note: I don't add salt to this because of the ham -- if you substitute another type of meat -- you might want to also include some Lawry's seasoned salt or Goya Adobo seasoning (which has everything from salt, black pepper, garlic, oregano mixed in already - very convenient!)

Zucchini Pizzas

You need a monster zucchini, one that's about 3 inches wide. Cut this into about one inch slices. Roast these over the fire on a grill brushed with garlic butter (or just plain butter).

Once one side is cooked flip over and top with pizza sauce and shredded cheese. Continue cooking until the cheese melts. (You can also use eggplant, but it's more difficult to get kids to eat it.)

Stew packets

When I went to Brownie Camp we used to make these:

carrot cut into chunks
1 potato cut into cubes
1 frozen hamburger patty broken into chunks
1 package of Lipton's Onion Soup
1 dollop of butter

Use tin foil to make a packet meal. Cut a square of tinfoil and put carrots, potato, hamburger in. Sprinkle with package of soup mix and put butter on top. Cook for 20 minutes on the hot coals of the campfire. You may need to check it. Yum.

Salsa Campfire Chicken

We lay out a piece of foil spray a little no stick spray on the foil.

In a bowl we have salsa roll a chicken leg in the salsa and place it on the foil.

Wrap it up. Cooking time depends on how hot the coals are, you want to turn a couple times.

Eggs in a Bag

This is a great scrambled eggs recipe and real easy for kids to do too when camping.

You can also find this recipe for baggie omelets here.

1) Medium to Large freezer baggie
2) Crack however many eggs you want into the baggie
3) Include any extras, chopped ham/bacon, green pepper,tomato, whatever you want and don't forget shredded cheese.
4) Seal the bag-tight
5) Make sure boiling water in pot on camp stove is ready
6) Use LONG tongs OR marshmallow roasting stick. Poke the stick through the top of the bag. Make sure to allow enough room at the top so you can put the bag into the water.
7) Cook 5-7 mins
8) Scoop or pour onto plate and breakfast is served.

Campfire Kabobs

Meatball Kabob Appetizers

4 refrigerated home style biscuits
24 frozen meatballs, thawed
6 T of Parmesan cheese, grated
1 sweet red bell pepper, seed and cut into 12 chunks

How to Make It:

Remove the biscuits from the cans and cut each biscuit into 4 pieces.

Place the biscuit pieces into a mixing bowl.

Add the Parmesan cheese and toss the biscuits until well coated.
Using a long metal skewer or a coat hanger straightened out stick on one biscuit, one meatball, another biscuit, a chunk of pepper, another biscuit, a meatball then end with another biscuit.


Cook carefully over an open campfire until bread is toasted and meat is done.
