Ingredients: 2 eggs 1 cup granulated sugar 3/4 cup vegetable oil (I use safflower) 1 teaspoon baking soda 1 teaspoon cinnamon 1/4 teaspoon salt 1 1/2 cups all-purpose flour 1 cup grated carrots (about 3-4 medium-sized carrots) 1/4 cup chopped walnuts (optional)
Directions: 1. Preheat oven to 350°F. Grease a 9x4 inch loaf pan. 2. In a large bowl, mix first three ingredients. Add next four ingredients and mix. Add carrots (and walnuts, if using) and mix throughly. 3. Pour into loaf pan. Bake for 1 hour, or until a knife inserted comes out clean. Let cool on a cooling rack for at least 15 minutes before serving.
