Cream cheese cupcakes

1 cup Sugar
1 egg beaten
1 Tsp Vanilla extract
1 8 oz package softened cream cheese
24 Vanilla wafers

Optional: Mini chocolate chips, raspberry jam

Beat egg and add vanilla, stir in sugar. Add cream cheese and beat till combined. Place a vanilla wafer in each cupcake liner.

Bake at 325 degrees for 15-20 minutes. Allow to cool. If decorating the top put a dollop of jam or chocolate chips in the center while still hot, they will sink a little into the cheesecake. Enjoy!
