1/2 cup firmly packed brown sugar
1/4 cup butter, melted
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 small apples, peeled, cored and cut into rings
Maraschino cherries
2 eggs, separated
1/2 cup sugar
3/4 cup flour
1/2 teaspoon baking powder
/14 teaspoon salt
1/4 cup apple juice
Heat oven to 350. Combine brown sugar, butter, cinnamon and nutmeg in a small bowl. Mix well and then spread into bottom of round cake pan. Arrange apple slices and enough Maraschino cherries to fill in the holes of the apple rings over the brown sugar mixture. I put them closely together to get more apple rings all around.
Beat egg yolks in a bowl until thick and really yellow. Add sugar and mix well. Add flour, baking powder, salt, and apple juice to egg yolk mixture and mix well. In another small bowl, beat egg whites until stiff peaks form. Fold the beaten egg whites into the batter. Pour batter into prepared pan, covering apples and cherries. Don't worry if you can see some of the cherries sticking through. The cake will rise as it bakes.
Bake at 350 for 30 to 35 minutes, until toothpick inserted in center comes out clean. Wait for about 2 minutes and then turn over onto serving plate. Be careful not to burn your fingers. Serve warm. Makes 6 servings but doesn't last long in our house!
This recipe was adapted from a Pineapple Upside Down Cake recipe in The Pillsbury Cookbook published by Bantam Books. I made my own changes to recreate it as an Apple Upside Down Cake for the fall season.

1-1/2 cups graham cracker crumbs
2 tablespoons sugar
1/4 cup butter, melted
2 8-ounce packages cream cheese, softened
1 cup sugar
1/4 teaspoon ground cinnamon
1/2 teaspoon apple-pie spice
1 16-ounce can or jar (1-2/3 cups) applesauce
2 tablespoons lemon juice
5 eggs
1/2 cup whipping cream
1/2 cup sugar
1 tablespoon butter
1/3 cup coarsely chopped pecans
directions
1. For crust, combine crumbs and 2 tablespoons sugar. Stir in butter, toss gently. Press onto bottom and 1 inch up sides of a 9-inch springform pan. Bake in 375 degree F oven about 10 minutes or until edges begin to brown. Cool slightly on a wire rack.
2. Meanwhile, for filling, combine cream cheese, 1 cup sugar, cinnamon, and apple-pie spice. Beat until fluffy. Beat in applesauce and lemon juice. Beat in eggs until combined.
3. Pour filling into crust-lined pan. Bake on a shallow baking pan in a 375 degree F oven 40 to 45 minutes or until center is nearly set. Cool on a wire rack 15 minutes. Loosen sides of pan. Cool 30 minutes more; remove sides. Cool completely. Chill at least 4 or up to 24 hours.
4. For sauce, in a small heavy saucepan melt 1/2 cup sugar over medium-high heat until sugar begins to melt, shaking pan often. (Do not stir.) Reduce heat; cook about 5 minutes more or until sugar is melted and golden. Stir as necessary after sugar begins to melt (only when mixture bubbles). Remove from heat. Carefully pour in 1/2 cup whipping cream. Add 1 tablespoon butter.
Return to heat; cook and stir for 1 to 2 minutes more or until smooth. Stir in 1/3 cup coarsely chopped pecans. Cool. Cover and chill up to 24 hours. To serve, cut cheesecake into wedges; top with sauce. Makes 12 to 16 servings.

1 medium apple, cored and cut in half
1 Tbsp granola
1/2 tsp sugar
1/4 tsp cinnamon
1) Microwave the apple for about one minute on high. You want the apple to be firm on the outside and soft on the inside. Depending on the apple size and the power of your microwave, the timing will vary. Let cool until you can handle it comfortably.
2) Scoop out the soft part of the apple (about half of the flesh) and place in a bowl. Combine this with the other ingredients. Spoon back into the apples.
3) Enjoy!!!

Caramel Apple Pizza
Ingredients:
1 tube of refrigerated sugar cookie dough
2 8oz containers of vanilla Greek yogurt
3 large apples (We used 1 red, 1 green and 1 yellow)
Caramel apple dip
1 lemon
Instructions:
1. Have a grown up preheat the oven to 350 F.
2. On a greased cookie sheet (or 9x13 in casserole dish) spread out the cookie dough so it makes a flat layer for the crust. It is easiest to use your hands.
3. Have a grown up bake the crust for 10 - 12 minutes. Next, let the crust cool completely.
4. Spread the vanilla Greek yogurt on top of the crust. This will be like the sauce on a pizza.
5. Juice the lemon into a bowl and add some water to it.
6. Have a grown up cut the apples into slices. Put the slices into the lemon water for a minute, then let them drain off on a plate. This will keep the apples from turning brown.
7. Arrange the apples on the top of the pizza however you would like to.
8. Drizzle (and glop) caramel onto the top of the pizza using a spoon.
9. Have a grown up cut it into pieces.
Enjoy!

You will need the following:
9 quarts of Applesauce, fresh or canned
2 tablespoons of ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon of allspice
4 cups sugar or Splenda, or an equivalent amount of sweetness to taste, from honey, stevia or frozen concentrated apple or white grape juice.
1 Crock pot (slow cooker)
Step By Step Instructions:
step 1: Fill Crock Pot (with applesauce) Within an inch from bottom (you will add the rest later)
Step 2: Add
2 table spoons of ground cinnamon
1 table spoon of ground cloves
1/2 tablespoon of allspice
2 cups of sugar (the other cups are used later on)
Step 3: Set crock pot on low or medium heat.
Cover it (leave about 2 inches uncovered)
Leave it to cook for about 8 to 16 hours (depends on the power of your slow cooker)
About every 2 hours stir the mixture with a spatula)
Step 4: Pour the mixture on a bowl and discard the burned bits (clean crock pot, then put mixture back in)
Step 5: Add the remaining applesauce and sugar (let cook for 4 hours so hat flavors mix)
Step 6: (optional) If you want a richer and thicker apple butter use a hand held drink mixer.
You are done! This is great for Christmas and other holidays (thanksgiving, also makes great presents)
