Holiday Sandwich Cookies

Homemade Chocolate Sandwich Cookies
Devils food cake mix or other chocolate cake mix
2 eggs
2/3 Cup shortening
Red or White frosting
Mix cake mix, eggs and shortening together in a mixing bowl. Form into balls and place on a ungreased cookie sheet. Bake at 375 degrees for 8 minutes. No longer than 8 minutes so they will be soft. Let cool.

For Valentine's Day, I cut the baked cookies out with a heart shaped cookie cutter. Frosted the middle and topped with another heart shaped cookie to make a sandwich.

For other holidays cut out with a different shaped cookie cutter.

I saved the extra cookie crumbs in a bag for the freezer. Later I will add them to brownie dough or for a topping for ice cream.

Easy and Fun Idea

Cute idea to use different holiday cookie cutters. You could also use with shape or alphabet cookie cutters for school activities. I teach Special Education so this could also be turned into an appropriate lesson for the students to use fine motor skills(pressing cutter and using plastic knives to spread frosting) and language skills(talking about shapes or holidays).
