Shortbread Lollipops

175g Plain Flour
55g Caster sugar
115g Butter
Pinch of salt
200g strawberries (chopped)

180o/Gas Mark 4

Mix together flour, salt and sugar. Rub the butter into the dry ingredients. Add chopped strawberries. Continue to mix until the mixture forms a soft dough.

Place a heart cutter onto a greased baking tray and lightly press the dough into the cutter, then remove the cutter and repeat.

When all the dough has been used press a lollipop stick into the shortbread hearts. Place into the oven for 20 - 25 minutes until it is firm and slightly brown. Sprinkle with sugar and allow to cool.
