Vegetable Lasagna

Create mini lasagnas and have everyone fix their own.

Lasagna consists of 4 parts, 3 if you don’t want the vegetables. Once you get your 4 parts ready then you put your lasagna together layer by layer.

Part 1. Lasagna noodles, uncooked

Part 2. Sauce
4 Cups spaghetti sauce or large jar
cooked ground hamburger

Part 3. Vegetables
For your vegetable layer choose any of these ideas. This layer can also be left out, added to your sauce or added to the cheese filling, if desired. Prepare vegetables.
small bunch of broccoli flowerets, cut in small pieces
2 carrots, shredded
2 Green or red bell peppers, chopped
1 Cup chopped spinach, unthawed, cooked and drain excess water off
Shredded zucchini
Cooked sliced mushrooms

Part 4: Cheese Filling:
15 oz or 2 Cups cottage or ricotta cheese
1/2 Cup grated Parmesan cheese
2 Tablespoons dried parsley
2 large eggs
1/2 cup mozzarella cheese
In bowl mix cottage cheese, Parmesan, parsley, mozzarella cheese and eggs.

Spread a thin layer of sauce on bottom of a 8x11inch or 13x9 inch pan. Lay lasagna noodles on bottom of pan. Spread cottage cheese mixture over top of noodles. Spread more sauce on top of noodles. Continue layering in pan until the pan is full. Sprinkle mozzarella cheese on top and bake at 350 degrees for 55 minutes or until noodles are tender.
