Angel Food Cake
This recipe is a great way to practice separating eggs and whipping egg whites until stiff peaks form.

Ingredients
- 1 cup flour plus 2 tablespoons
- 3/4 cup sugar plus 2 tablespoons
- 12 egg whites
- 1 1/2 teaspoons cream of tartar
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1 1/2 teaspoons vanilla
- 1/2 teaspoon almond extract
Instructions
- Heat oven to 375 degrees Fahrenheit.
- Sift together the flour and the first measured sugar and set aside.
- Combine the extracts in a small bowl and set aside.
- Beat the egg whites, cream of tartar, and salt until peaks form.
- Slowly add the second measured sugar, then beat on high until stiff peaks form.
- Beat on low while adding the flour mixture and extracts slowly.
- Spoon into an angel food cake pan and move a knife through the batter to remove air pockets.
- Bake 30 to 35 minutes.
- Invert the pan onto a tin funnel to cool.
