Angel Food Cake

This recipe is a great way to practice separating eggs and whipping egg whites until stiff peaks form.

Ingredients

  • 1 cup flour plus 2 tablespoons
  • 3/4 cup sugar plus 2 tablespoons
  • 12 egg whites
  • 1 1/2 teaspoons cream of tartar
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1 1/2 teaspoons vanilla
  • 1/2 teaspoon almond extract

Instructions

  1. Heat oven to 375 degrees Fahrenheit.
  2. Sift together the flour and the first measured sugar and set aside.
  3. Combine the extracts in a small bowl and set aside.
  4. Beat the egg whites, cream of tartar, and salt until peaks form.
  5. Slowly add the second measured sugar, then beat on high until stiff peaks form.
  6. Beat on low while adding the flour mixture and extracts slowly.
  7. Spoon into an angel food cake pan and move a knife through the batter to remove air pockets.
  8. Bake 30 to 35 minutes.
  9. Invert the pan onto a tin funnel to cool.
Teaching Tip: This recipe is a great demonstration of how egg whites can trap air and create a light texture.
