Baked Ice Cream Snowballs

Ingredients
- Broken cookies (to
layer in ramekins)
- Ice cream (favorite
flavor)
- 3 egg whites, room
temperature
- ¼ teaspoon cream of
tartar
- ¼ cup sugar
- ½ teaspoon vanilla
- Optional: chocolate
syrup (for decorating)
Instructions
- In small oven-safe dishes (ramekins), place
broken cookies in the bottom. (You’ll need 6
ramekins, about 3-inch size.)
- Add ice cream to fill each ramekin. Place
ramekins in the freezer while you make the
meringue.
- Preheat oven to 400°F.
- Add egg whites to a mixing bowl and whip until
soft peaks form.
- Add cream of tartar, sugar, and vanilla.
Continue whipping until stiff peaks form.
- Remove ramekins from freezer and completely
cover the ice cream with meringue (no gaps).
- Place on a cookie sheet and bake 5–10 minutes,
just until meringue is browned.
- Serve immediately. Decorate with chocolate syrup
if desired.

- Safety: Adults should handle
the oven and hot ramekins.
- Seal it! The meringue must
fully cover the ice cream (this helps insulate
it).
- Watch closely: Browning happens
fast- stay by the oven.
- Kid jobs: Crushing cookies,
scooping ice cream, and spooning meringue on top
(with help).
