Ingredients

  • 1 cup white sugar
  • 1/4 cup butter
  • 2 eggs
  • 15 oz can kidney or pinto beans, drained and mashed
  • 2 teaspoons vanilla
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/2 cup chopped pecans (optional)
  • 2 cups peeled and diced apple
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 375°F. Grease a Bundt pan or 13x9-inch baking pan.
  2. Drain beans and puree in a blender until smooth.
  3. In a mixing bowl, cream together sugar and butter.
  4. Blend in eggs, vanilla, and pureed beans.
  5. In a separate bowl, combine flour, baking soda, salt, cinnamon, and cloves.
  6. Gradually add dry ingredients to bean mixture and mix well.
  7. Stir in diced apples and optional pecans.
  8. Pour batter into prepared pan.
  9. Bake 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool completely, transfer to serving platter, and dust with powdered sugar.
