Beef Noodles (Microwave Meal)

ground beef, noodles, and a creamy mushroom
sauce. This easy casserole-style meal comes
together in about 30 minutes and is great for
busy weeknights.

Ingredients
- 1 pound ground
beef (hamburger)
- 1 can cream of
mushroom soup
- 1 (4 oz) can
mushroom pieces, drained
- 4 cups uncooked
noodles
- 1½ tablespoons
mustard
- 2½ cups water
- 1 tablespoon
dried parsley flakes
Equipment
- 2-quart glass microwave-safe casserole dish
with lid (or microwave-safe cover)
Instructions
- Place
ground beef in a 2-quart glass casserole
dish. Break it up with a fork and spread
evenly along the bottom.
- Microwave
uncovered for 6–8 minutes (or until beef is
cooked through), breaking it up once or
twice during cooking.
- Carefully
drain off as much fat as possible.
- Stir beef
again to crumble into smaller pieces.
- Add cream
of mushroom soup, mushrooms, uncooked
noodles, mustard, water, and parsley. Stir
until evenly combined.
- Cover dish
and microwave for 15–17 minutes, stirring
occasionally, until noodles are tender.
- Let stand
3–5 minutes to cool slightly and thicken
before serving.
