Prep: 10 minutes | Cook: 22–25 minutes | Yield: 4–6 servings

Ingredients

  • 1 pound ground beef (hamburger)
  • 1 can cream of mushroom soup
  • 1 (4 oz) can mushroom pieces, drained
  • 4 cups uncooked noodles
  • 1½ tablespoons mustard
  • 2½ cups water
  • 1 tablespoon dried parsley flakes

Equipment

  • 2-quart glass microwave-safe casserole dish with lid (or microwave-safe cover)

Instructions

  1. Place ground beef in a 2-quart glass casserole dish. Break it up with a fork and spread evenly along the bottom.
  2. Microwave uncovered for 6–8 minutes (or until beef is cooked through), breaking it up once or twice during cooking.
  3. Carefully drain off as much fat as possible.
  4. Stir beef again to crumble into smaller pieces.
  5. Add cream of mushroom soup, mushrooms, uncooked noodles, mustard, water, and parsley. Stir until evenly combined.
  6. Cover dish and microwave for 15–17 minutes, stirring occasionally, until noodles are tender.
  7. Let stand 3–5 minutes to cool slightly and thicken before serving.

Kid-Friendly Tips

  • Kids can measure noodles and stir in the sauce ingredients
  • Adults should handle draining hot grease and microwaving
  • Teach kids how to stir safely with oven mitts and a long spoon

Easy Variations

  • Add peas or corn for extra veggies
  • Swap mushrooms for diced cooked carrots or bell peppers
  • Top with shredded cheese and microwave 30 seconds to melt

Notes

Microwave times vary by wattage. If noodles aren’t tender, microwave in 1–2 minute increments, stirring each time. Always use a microwave-safe cover to reduce splatters.
