Ingredients
- 1 small package
lemon gelatin
- 1 teaspoon salt
- 1 can beets, diced
(reserve juice)
- 1 cup beet juice
(add water if needed)
- 1/2 cup vinegar
- 1/2 cup water
Instructions
- Drain beets and
reserve the juice. Add enough water to make 1
cup total liquid.
- In a saucepan,
combine beet juice mixture, vinegar, water, and
salt. Heat until warm but not boiling.
- Stir in lemon
gelatin until completely dissolved.
- Remove from
heat and stir in diced beets.
- Pour into
serving dishes or a mold.
- Refrigerate 3–4
hours until fully set.
