These adorable Homemade Potato Bird’s Nests
are a creative spring recipe perfect for Easter brunch
or a fun kitchen project with kids. Crispy shredded
potato nests are filled with a soft breadcrumb center
and topped with mashed potato “eggs” for a charming
edible display.
Ingredients
For the Potato Nests:
- 2 large potatoes, peeled and shredded
- 1 egg
- 1/4 teaspoon salt
- 1/4 teaspoon ground white or black pepper
- 1 1/2 teaspoons melted butter
For the Nest Filling:
- 2 tablespoons plain breadcrumbs (toasted is best)
- 2 tablespoons hot milk
- Pinch of salt and pepper
For the Mashed Potato “Eggs”:
- 1 small potato, peeled and boiled
- 1/2 teaspoon butter
- Pinch of salt
- Pinch of white or black pepper
Directions
- Prep the Potatoes: Peel and shred
the 2 large potatoes. Squeeze out excess moisture
with a clean towel.
- Mix: Beat egg. Stir in shredded
potatoes, salt, and pepper.
- Form Nests: Grease muffin tin.
Add about 1½ tablespoons mixture per cup. Press up
sides to create nests. Drizzle melted butter into
each.
- Bake: Preheat oven to 400°F. Bake
30 minutes until golden and crispy. Cover loosely
with foil if needed.
- Add Filling: Mix breadcrumbs with
hot milk, salt, and pepper. Spoon 1 teaspoon into
each cooled nest.
- Make “Eggs”: Mash boiled potato
with butter and seasoning. Shape into small oval
eggs and place inside nests.

- Shred potatoes (with supervision)
- Press mixture into muffin cups
- Shape mashed potato eggs
- Assemble nests
Tip: Removing excess moisture
helps the nests crisp beautifully. These can be made
ahead and reheated before serving.
