Broccoli and Rice Soup
This creamy broccoli and rice soup is a simple family dinner idea that combines broccoli, rice, and a creamy base in one warm bowl.
Ingredients
- 1 package Rice-a-Roni
- 5 cups water
- 1/2 package fat free cream cheese
- 1 can cream of chicken soup
- 1 large head broccoli, chopped
- Sliced almonds for topping, optional
Instructions
- In a saucepan, have an adult add the Rice-a-Roni and seasoning packet to the water.
- Simmer for 8 to 10 minutes.
- Add the chopped broccoli and cook until tender.
- In a separate bowl, mix the cream of chicken soup and cream cheese together until smooth.
- Add the soup mixture to the pan and stir until melted and combined.
- Serve warm and top with sliced almonds if desired.
Tip: Chop the broccoli into small pieces so it cooks quickly and is easier for kids to eat.
