Classic Carrot Raisin Salad

Ingredients

  • 3 to 4 medium carrots
  • 1/4 cup raisins
  • 3 tablespoons plain yogurt or Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 teaspoon honey, optional
  • 1 teaspoon lemon juice, optional

Directions

  1. Wash and peel the carrots.
  2. Shred the carrots with a box grater or food processor. An adult should supervise or handle the shredding tool.
  3. Place the shredded carrots in a medium serving bowl.
  4. Add the raisins and stir to distribute them evenly.
  5. In a small bowl, stir together the yogurt, mayonnaise, honey, and lemon juice.
  6. Pour the dressing over the carrots and raisins.
  7. Toss until the carrots are lightly coated.
  8. Serve immediately or cover and chill for 20 to 30 minutes before serving.
