Prep Time: 10 minutes
Total Time: 10 minutes
Yield: 4
carrot toasts
Ingredients
- 4 slices bread (white
or whole wheat)
- Cream cheese (or
hummus/ricotta as a swap)
- Shredded carrots
- Chopped broccoli
(small pieces for stems)
- Optional: cucumber
slices, sesame seeds, or pepper
Instructions
- Cut bread into a carrot shape using a knife or a carrot-shaped
cookie cutter.
- Spread a thin layer of cream cheese (or another
spread) over the toast.
- Sprinkle shredded carrots on the bottom half of
the toast to create the “carrot” part.
- Add chopped broccoli at the top to make the green
“stems.”
- Serve right away, or refrigerate up to 2 hours for
a party tray.
Kid-Friendly Tips
- Let kids “decorate” their own toast like edible
art.
- Use a butter knife for spreading (safer for
younger kids).
- Prep bowls of toppings so kids can build
independently.
Fun Variations
- Protein Boost: Use Greek yogurt
cream cheese or add a sprinkle of sunflower seeds.
- Dairy-Free: Swap in hummus or
dairy-free cream cheese.
- Extra Veggies: Add thin cucumber
“leaves” or bell pepper strips.
Notes
For the best look, pat shredded
carrots dry with a paper towel so they don’t slide.
Use very small broccoli pieces so they stick easily to
the spread.
