Ingredients

  • 4 slices bread (white or whole wheat)
  • Cream cheese (or hummus/ricotta as a swap)
  • Shredded carrots
  • Chopped broccoli (small pieces for stems)
  • Optional: cucumber slices, sesame seeds, or pepper

Instructions

  1. Cut bread into a carrot shape using a knife or a carrot-shaped cookie cutter.
  2. Spread a thin layer of cream cheese (or another spread) over the toast.
  3. Sprinkle shredded carrots on the bottom half of the toast to create the “carrot” part.
  4. Add chopped broccoli at the top to make the green “stems.”
  5. Serve right away, or refrigerate up to 2 hours for a party tray.
