Carrot Cauliflower Casserole

This carrot cauliflower casserole is a simple baked vegetable dish made with cauliflower, carrots, and a creamy sauce topped with buttery bread crumbs.

Ingredients

  • 1/2 cup bread crumbs
  • 1 1/2 tablespoons unsalted butter, melted
  • 3/4 cup light sour cream
  • 3/4 cup light mayonnaise
  • 3 cloves garlic, chopped
  • 1 small onion, chopped
  • 1 head cauliflower, cut into florets
  • 1 pound carrots, sliced
  • Salt and pepper to taste
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat the oven to 425°F.
  2. Cook the carrots in salted boiling water for about 6 minutes.
  3. Add the cauliflower and cook for another 5 minutes.
  4. Drain the vegetables and rinse with cold water.
  5. Spray a 9x13-inch baking dish with cooking spray.
  6. In a bowl, mix the sour cream, mayonnaise, garlic, onion, salt, and pepper.
  7. Stir in the cooked vegetables and spread the mixture into the baking dish.
  8. Mix the bread crumbs with the melted butter and sprinkle over the top.
  9. Cover and bake for about 20 minutes.
  10. Sprinkle with parsley before serving.
