Ingredients
- 2 tablespoons butter
(for greasing ramekins)
- 2 tablespoons sugar

- 4 oz semi-sweet
chocolate, chopped
- 2 tablespoons butter
- 2 tablespoons flour
- ½ cup milk
- 2 egg yolks
- 3 egg whites
- ¼ cup sugar
- ½ teaspoon vanilla
extract
Instructions
- Preheat oven to 375°F. Grease four ramekins with
butter and coat with sugar.
- Melt chocolate and 2 tablespoons butter together
until smooth. Set aside.
- In a saucepan, whisk flour and milk over medium
heat until thickened.
- Remove from heat and stir in melted chocolate,
egg yolks, and vanilla.
- In a separate bowl, beat egg whites until foamy,
then slowly add sugar and beat to soft peaks.
- Gently fold egg whites into the chocolate
mixture using a spatula.
- Spoon batter into prepared ramekins and smooth
the tops.
- Bake for 12-15 minutes until puffed and set
around the edges.
- Serve immediately while the soufflés are risen.
