Coconut Truffles


3/4 Cup almond meal
1 Tablespoons coconut cream
2 Tablespoons arrowroot powder
1 Tablespoons maple syrup
1/2 Cup shredded coconut
1/2 Tablespoon melted coconut oil
1 teaspoon pure vanilla extract
Extra shredded coconut

Process the almond meal, arrowroot powder and coconut in a blender to get an almost powder-like mixture. Add to a bowl and stir in coconut cream, maple syrup, coconut oil and vanilla.

Blend until the mixture can come together and form small balls with the mixture.

Roll the balls in the extra coconut and chill several hours.
