Breakfast Egg Casserole with Hash Browns

Ingredients

  • 3 cups frozen shredded hash browns, thawed
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 cup cooked chopped ham, bacon, sausage, or turkey
  • 6 large eggs
  • 1 1/2 cups milk
  • 1/4 cup finely chopped or puréed vegetables, such as zucchini, broccoli, spinach, bell peppers, or onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat the oven to 350 F. Lightly grease a 9-inch square or 2-quart casserole dish.
  2. Spread the thawed hash browns evenly across the bottom of the prepared dish.
  3. Sprinkle 1 cup of the shredded cheese over the potatoes.
  4. Add the cooked breakfast meat and vegetables in an even layer.
  5. Crack the eggs into a large mixing bowl.
  6. Add the milk, salt, and black pepper. Whisk until the yolks and whites are completely blended.
  7. Pour the egg mixture evenly over the potatoes, meat, cheese, and vegetables.
  8. Sprinkle the remaining 1/2 cup cheese over the top.
  9. Bake uncovered for 40-45 minutes, or until the center is set and the egg casserole reaches 160 F.
  10. Let the casserole rest for 5-10 minutes before cutting into squares and serving.

Thaw and Drain the Hash Browns

Frozen hash browns can release extra moisture while baking. Thaw them first and gently press away excess moisture with paper towels or a clean kitchen towel to help the bottom of the casserole bake evenly.

Easy Egg Casserole Variations

  • Ham and cheddar: Use diced ham with sharp cheddar cheese.
  • Sausage breakfast casserole: Add cooked breakfast sausage with onions and bell peppers.
