Homemade Granola (Large Batch)

Ingredients

  • 8 cups rolled oats
  • 1½ cups slivered almonds
  • 1½ cups cashews
  • ¾ cup shredded coconut
  • ½ cup brown sugar
  • ½ cup honey
  • ¼ cup vegetable or canola oil
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla
  • 2 cups dried fruit

Instructions

  1. Preheat oven to 250°F.
  2. Mix oats, nuts, coconut, and brown sugar in a large bowl.
  3. Stir in honey, oil, salt, cinnamon, and vanilla.
  4. Spread onto 2- 3 cookie sheets.
  5. Bake 1-1½ hours, stirring every 15 minutes.
  6. Remove from oven and stir in dried fruit.
