Homemade Granola (Large Batch)

A classic baked granola
recipe made with oats, nuts, honey, and coconut.
This large-batch recipe stores well in the freezer
and is perfect for breakfasts, snacks, and yogurt
parfaits.

Ingredients
- 8 cups rolled oats
- 1½ cups slivered
almonds
- 1½ cups cashews
- ¾ cup shredded
coconut
- ½ cup brown sugar
- ½ cup honey
- ¼ cup vegetable or
canola oil
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 teaspoons vanilla
- 2 cups dried fruit
Instructions
- Preheat oven to 250°F.
- Mix oats, nuts, coconut, and brown sugar in a
large bowl.
- Stir in honey, oil, salt, cinnamon, and vanilla.
- Spread onto 2- 3 cookie sheets.
- Bake 1-1½ hours, stirring every 15 minutes.
- Remove from oven and stir in dried fruit.
