Carrot Granola Breakfast Bars

Ingredients

  • 3 cups homemade granola
  • ⅓-½ cup honey
  • ¼ cup peanut butter or nut butter
  • ½ cup finely shredded carrots

Instructions

  1. Preheat oven to 350°F. Grease an 8×8-inch baking pan or line with parchment paper.
  2. In a mixing bowl, stir together honey and peanut butter until smooth.
  3. Fold in the finely shredded carrots.
  4. Add granola and stir until evenly coated.
  5. Spoon mixture into prepared pan and press down very firmly using the back of a spoon or clean hands.
  6. Bake for 15-20 minutes, until lightly golden.
  7. Let bars cool completely before slicing.
