Crispy Granola Bars

Ingredients

  • 3 cups oats
  • 1 cup Rice Krispies cereal
  • 1/4 cup chopped nuts
  • 1/3 cup honey
  • 1/2 cup creamy peanut butter
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar

For the Topping

  • Chocolate chips
  • Peanut butter

Instructions

  1. Line a 13×9-inch pan with parchment paper or foil. Preheat oven to 350°F.
  2. In a large bowl, mix oats, cereal, and chopped nuts.
  3. In a separate bowl, stir together honey, peanut butter, oil, vanilla, and brown sugar until smooth.
  4. Pour honey mixture into the cereal mixture and stir until evenly coated.
  5. Press mixture firmly into the prepared pan to create a thin, compact layer.
  6. Sprinkle chocolate chips evenly over the top.
  7. Bake for 15-20 minutes, until lightly golden.
  8. Remove from oven and spread melted chocolate over the bars. Drop spoonfuls of peanut butter on top and gently spread as it softens.
  9. Let cool completely. Lift out using parchment paper and cut into bars.
