- 2 cups water

grits

- 1 egg, separated

Instructions
- Preheat oven to
350°F and lightly grease a casserole dish.
- In a saucepan,
bring water to a boil. Stir in grits.
- Reduce heat,
cover, and cook for about 5 minutes, stirring
occasionally.
- Stir in butter
and shredded cheese until melted.
- Separate egg
yolk from egg white. Set egg white aside.
- In a small
bowl, beat egg yolk with milk. Stir mixture into
the warm grits.
- In a separate
bowl, beat egg white until stiff peaks form.
- Gently fold egg
white into the grits mixture.
- Pour grits into
prepared casserole dish and bake for 1 hour.
