Ham and Cheese Breakfast Loaf

This ham and cheese breakfast loaf is a cross between an egg casserole and a savory breakfast bread. Eggs, ham, bacon, and two kinds of cheese bake into firm slices that are easy to serve for brunches, holiday breakfasts, potlucks, or breakfast meal prep. It can be baked in a casserole dish for squares or a loaf pan for thicker slices.

Ingredients

  • 6 eggs
  • 3/4 cup milk
  • 1 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 bacon strips, cooked and crumbled
  • 1 cup cooked ham, diced
  • 4 ounces cheddar cheese, cubed
  • 4 ounces Monterey Jack cheese, cubed

Directions

  1. Preheat the oven to 450F. Grease a 9 x 13-inch baking dish or loaf pan.
  2. Beat the eggs and milk together in a large bowl.
  3. In another bowl, combine the flour, baking powder, and salt.
  4. Gradually stir the dry ingredients into the egg mixture until smooth.
  5. Fold in the bacon, ham, cheddar cheese, and Monterey Jack cheese.
  6. Spread the mixture evenly into the prepared baking dish.
  7. Bake for 20-25 minutes, or until the center is set and lightly golden.
  8. Allow the loaf to cool for about 10 minutes before cutting into squares or slices.

Loaf Pan Option

You may also bake the mixture in two greased loaf pans. Because the mixture will be deeper, begin checking after 25 minutes and continue baking until the center is completely set.

  • Cube the cheese with a kid-safe knife.
