Lemony
Snowballs

Ingredients
- ½ cup butter,
softened
- ⅔ cup sugar
- 1 egg
- ¼ cup lemon juice
- 1¾ cups flour
- ¼ teaspoon baking
soda
- ¼ teaspoon cream
of tartar
- ¼ teaspoon salt
- Powdered sugar,
for rolling
Instructions
- Cream butter and
sugar together in a mixing bowl.
- Add egg and
lemon juice and blend well.
- Add flour, salt,
baking soda, and cream of tartar. Stir until
well combined.
- Preheat oven to
350°F. Roll dough into small balls and place on
a cookie sheet. If dough is too sticky to
handle, chill for 2 hours.
- Bake 10–12
minutes, until bottoms are lightly browned.
- Transfer to a
cooling rack or waxed paper. While still
slightly warm, roll cookies in powdered sugar.
Notes
If the dough feels sticky, chill
it for 2 hours before rolling. Roll cookies in
powdered sugar while still slightly warm for the
best “snowball” coating.
