Lemony Snowballs

Ingredients

  • ½ cup butter, softened
  • ⅔ cup sugar
  • 1 egg
  • ¼ cup lemon juice
  • 1¾ cups flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon cream of tartar
  • ¼ teaspoon salt
  • Powdered sugar, for rolling

Instructions

  1. Cream butter and sugar together in a mixing bowl.
  2. Add egg and lemon juice and blend well.
  3. Add flour, salt, baking soda, and cream of tartar. Stir until well combined.
  4. Preheat oven to 350°F. Roll dough into small balls and place on a cookie sheet. If dough is too sticky to handle, chill for 2 hours.
  5. Bake 10–12 minutes, until bottoms are lightly browned.
  6. Transfer to a cooling rack or waxed paper. While still slightly warm, roll cookies in powdered sugar.

Notes

If the dough feels sticky, chill it for 2 hours before rolling. Roll cookies in powdered sugar while still slightly warm for the best “snowball” coating.
