Lentil Pancakes

Ingredients

  • 1 egg
  • 1 cup milk
  • 2 tablespoons applesauce
  • 1 cup wheat flour
  • 1/2 teaspoon salt
  • 2 tablespoons baking powder
  • 2 tablespoons sugar
  • 1/3 cup cooked lentils
  • 1/2 cup plain yogurt

Instructions

  1. Add all ingredients to a blender.
  2. Blend until smooth and well combined.
  3. Heat a lightly greased griddle over medium heat.
  4. Pour batter onto hot griddle, about 1/4 cup per pancake.
  5. Cook until bubbles form on top (about 2–3 minutes), then flip.
  6. Cook another 1–2 minutes until golden brown.
  7. Serve warm with syrup, fruit, or yogurt.
