Ingredients
- Cooking oil spray
- 2 eggs
- 50 g spinach,
chopped
- 1 tablespoon
shredded or sprinkled cheese

Instructions
- Spray the
inside of a microwave-safe mug or jar with
cooking oil spray.
- Crack eggs into
the mug and beat with a fork until yolks and
whites are fully combined.
- Add spinach,
cheese, green onions (if using), salt, and
pepper.
- Gently stir
once to combine ingredients.
- Microwave on
HIGH for 90 seconds, or until eggs are fully
set.
- Let stand for
30 seconds before eating (mug will be hot).
