Ingredients

  • 2 eggs
  • 50 g spinach, chopped
  • 1 tablespoon shredded or sprinkled cheese

Instructions

  1. Spray the inside of a microwave-safe mug or jar with cooking oil spray.
  2. Crack eggs into the mug and beat with a fork until yolks and whites are fully combined.
  3. Add spinach, cheese, green onions (if using), salt, and pepper.
  4. Gently stir once to combine ingredients.
  5. Microwave on HIGH for 90 seconds, or until eggs are fully set.
  6. Let stand for 30 seconds before eating (mug will be hot).
