Ingredients
Peach Filling
- ½ cup sugar
- 1 tablespoon
cornstarch
- ¼ teaspoon ground
cinnamon
- ¼ teaspoon nutmeg
- 4 cups sliced
peaches
- 1 teaspoon lemon
juice
Cobbler Topping
- 1 cup all-purpose
flour
- 1 tablespoon sugar
- 1½ teaspoons baking
powder
- ½ teaspoon salt
- 3 tablespoons
shortening
- ½ cup milk
Instructions
- Preheat oven to
400°F. Lightly grease a small casserole dish and
set aside.
- Make
the topping: In a mixing bowl,
combine flour, 1 tablespoon sugar, baking
powder, and salt. Cut in the shortening until
the mixture resembles fine crumbs. Stir in milk
just until a thick batter forms. Set aside.
- Make
the filling: In a saucepan, whisk
together ½ cup sugar, cornstarch, cinnamon, and
nutmeg. Add sliced peaches and lemon juice.
- Cook over
medium heat, stirring constantly, until the
mixture thickens and comes to a boil. Boil 1-2
minutes, then pour into the prepared casserole
dish.
- Spoon the
topping over the peaches (it doesn't have to
cover perfectly- rustic is fine).
- Bake for about
25 minutes, or until the top is golden brown and
the peaches are bubbly.
- Cool 10 minutes
before serving.

- Kids can measure spices, stir the dry topping
ingredients, and spoon topping onto peaches
- Adults should handle the hot saucepan and oven
- Let kids practice "cutting in" shortening with
a fork or pastry blender

Notes
If your peaches are extra
juicy, cook the filling an extra minute to
