pink egg whites are soaked in beet juice before
being filled with a creamy yolk mixture. Perfect for

Ingredients
- Hard boiled eggs
- 1 can beets with
juice
- Mayonnaise or
Miracle Whip
- 1 teaspoon mustard
- Paprika
- Salt and pepper to
taste
Instructions
- Peel hard
boiled eggs and slice in half lengthwise.
- Remove yolks
and place in a mixing bowl.
- Drain beet
juice into a glass or bowl and set beets aside.
- Place egg
whites into beet juice for 1–2 minutes,
depending on how deep pink you want them.
- Remove egg
whites and drain on paper towels.
- Mash yolks with
mayonnaise, mustard, salt, and pepper until
smooth and creamy.
- Spoon or pipe
yolk mixture into each pink egg white.
- Sprinkle
lightly with paprika and serve.
