Chicken Quiche

This chicken quiche is a good way to use leftover chicken in a breakfast or brunch recipe.

Chicken quiche with tomatoes

Ingredients

  • 2 to 3 cups shredded chicken
  • 1 1/2 cups milk
  • 3 eggs
  • 1 1/2 cups shredded cheese
  • Optional 1/2 package frozen chopped broccoli, thawed
  • Pie crust
  • Salt and pepper

Directions

  1. Preheat oven to 375 degrees F.
  2. In a bowl, mix shredded chicken, milk, eggs, cheese, optional broccoli, salt, and pepper.
  3. Pour into a pie crust.
  4. Bake for about 40 minutes, or until lightly browned and a knife inserted in the middle comes out clean.
