sweet bell peppers and melty cheese. These rainbow
pepper strips are quick to broil and perfect for
teaching kids about color, vegetables, and simple
oven cooking.

Ingredients
- ½ large green bell
pepper
- ½ large red bell
pepper
- ½ large yellow bell
pepper
- ½ large orange bell
pepper
- 1 cup Monterey Jack
cheese, shredded
- 2 tablespoons ripe
olives, chopped
- (Optional) Red
pepper flakes, to taste
Instructions
- Preheat the
broiler while preparing the peppers.
- Cut each pepper
half into 9 strips, making about 36 strips
total.
- Place pepper
strips skin-side down on an ungreased rimmed
baking sheet.
- Sprinkle
shredded cheese evenly over all pepper strips.
- Top with
chopped olives and a light sprinkle of red
pepper flakes, if desired.
- Broil about 6
inches from the heat for 5 minutes, or until
peppers are crisp-tender and cheese is melted.
- Remove from
oven and serve warm.
