Easter Resurrection Cookies

Easter Resurrection Cookies are a meaningful overnight meringue cookie activity for families. Kids help crush pecans, whip egg whites, and “seal the tomb” (the oven) while reading short Bible verses. In the morning, the cookies are crisp, cracked, and hollow inside—symbolizing the empty tomb.

Ingredients

  • 1 cup pecan halves
  • 1 teaspoon white vinegar
  • 3 egg whites (room temperature for best results)
  • Pinch of salt
  • 1 cup sugar

Instructions

  1. Preheat: Preheat oven to 300°F before you start so it’s fully warm.
  2. Crush the pecans: Place pecans in a freezer bag. Let kids crush into small pieces using a rolling pin or wooden mallet.

  3. Vinegar: Let everyone smell the vinegar. Add 1 teaspoon to a mixing bowl.

  4. Add egg whites: Add the 3 egg whites to the bowl with vinegar.

  5. Salt: Sprinkle a pinch of salt into your child’s hand to taste a tiny bit, then add the rest to the bowl.

  6. Add sugar gradually: While beating on high, slowly add 1 cup sugar.

  7. Beat until stiff peaks: Beat 12–15 minutes until stiff, glossy peaks form.

  8. Fold in nuts: Gently fold in crushed pecans. Drop by teaspoon onto a cookie sheet lined with parchment paper (preferred) or wax paper.*

  9. Bake briefly: Put the cookie sheet in the oven. Bake at 300°F for 10 minutes.
  10. Turn oven off: Without opening the door, turn the oven OFF.
  11. Seal the tomb: Let kids place tape on the oven door as a “seal.”

  12. Go to bed: Leave cookies in the closed oven overnight.

Kid-Friendly Tips

  • Assign jobs: pecan crusher, sugar measurer, and “tomb sealer.”
  • Room-temperature egg whites whip faster and create better volume.
  • Use parchment paper if possible—wax paper can sometimes stick after baking.

Notes

Important: The key to hollow cookies is leaving the oven door closed overnight. Opening the door early lets moisture in and can make the cookies sticky or collapse. Store cooled cookies in an airtight container.

*If using wax paper: It works for many families, but parchment is more reliable for easy release.
