This simple rice recipe is toasted in butter and oil, then simmered until tender for extra flavor.

Ingredients
- 3 cups rice
- 1 tablespoon butter
- 2 tablespoons oil
- 3 cups water or
chicken broth
- 1 cup chopped
onions, optional
- 1 cup chopped
celery, optional
Directions
- Brown the rice in butter and oil in a frying
pan.
- Add chopped onions or celery if using and cook
until the rice looks glassy.
- Add water or chicken broth.
- Cover and cook 20 minutes, or until rice is
tender.
You can saute 1 cup chopped onions and/or 1 cup
chopped celery with the butter and oil.
