Frost: 45–60 minutes | Yield:
1 shamrock cake (about
10–12 servings)
Ingredients
- 1 box white or
yellow cake mix or
** chocolate cake mix (if you don't want a green
cake)
- 1 package instant
pistachio pudding mix
- Green food coloring
(optional, for brighter color)
- White frosting
(homemade or store-bought)
- (Optional) 1/8
teaspoon peppermint extract (for minty frosting)
- Sprinkles or gold
sugar (optional decoration)
Equipment
- 3 mini heart-shaped pans (for a 3-leaf clover)
or 4 mini heart pans (for a 4-leaf clover)
- 1 mini rectangle loaf pan (for the stem)
- Shortening or baking spray + flour (to grease
pans)
- Serving platter
Instructions
- Preheat the
oven to the temperature on the cake mix box
(usually 350°F). Grease mini heart pans and the
mini loaf pan with shortening or baking spray.
Dust with flour and tap out excess.
- Prepare cake
batter according to the cake mix package
directions. Stir in the pistachio pudding mix
until blended. Add a few drops of green food
coloring if you want a brighter shamrock green.
- Divide batter
evenly between the mini heart pans and the mini
loaf pan (stem). Fill each pan about 2/3 full.
- Bake according
to the cake mix directions, checking early since
mini pans bake faster. Cakes are done when a
toothpick comes out clean.
- Cool cakes in
pans for 10 minutes, then turn out onto a rack
to cool completely.
- Arrange the
cooled heart cakes on a serving platter into a
clover shape. Add the mini loaf cake as the
stem.
- Tint white
frosting green (and add peppermint extract if
using). Frost the shamrock cake. Decorate with
sprinkles or gold sugar if desired.
Kid-Friendly Tips
- Kids can help add pudding mix, stir batter,
and add food coloring drop-by-drop
- Let kids “build the shamrock” by arranging the
hearts and stem on the platter
- Kids can spread frosting and decorate with
sprinkles (adults handle oven + removing cakes)
Fun Decoration Ideas
- Add “gold coins” (yellow candies) at the base
of the stem
- Pipe a darker green outline around each heart
leaf
- Top with rainbow candy strips leading to the
shamrock
Notes
Mini pans bake faster than
standard pans—start checking for doneness 5–10
minutes early. Cool cakes fully before frosting so
the frosting doesn’t melt. If cakes slide on the
platter, use a small dab of frosting underneath
each piece to “glue” it in place.
