Turkey Stuffed Mushrooms

Ingredients

  • 3 tablespoons extra virgin olive oil, divided
  • 1 lb. bulk turkey sausage
  • 4 oz. goat cheese, room temperature, cut into small chunks
  • 16 oz. medium Portobello mushrooms, rinsed, stems removed, and patted dry
  • Sea salt and black pepper, optional

Directions

  1. Preheat oven to 350°F and lightly grease a large roasting pan with 1 tablespoon olive oil.
  2. Heat the remaining olive oil in a skillet over medium heat and cook turkey sausage until no longer pink, breaking it into small pieces.
  3. Add goat cheese to the skillet and cover for 1 to 2 minutes. Stir until melted and combined.
  4. Fill each mushroom cap with the turkey mixture.
  5. Drizzle mushrooms with remaining olive oil and season if desired.
  6. Roast for 10 to 12 minutes, until slightly browned around the edges, then serve.
