Turkey Stuffed Mushrooms
Baked Portobello mushrooms filled with turkey sausage and goat cheese make a hearty mushroom recipe.

Ingredients
- 3 tablespoons extra virgin olive oil, divided
- 1 lb. bulk turkey sausage
- 4 oz. goat cheese, room temperature, cut into small chunks
- 16 oz. medium Portobello mushrooms, rinsed, stems removed, and patted dry
- Sea salt and black pepper, optional
Directions
- Preheat oven to 350°F and lightly grease a large roasting pan with 1 tablespoon olive oil.
- Heat the remaining olive oil in a skillet over medium heat and cook turkey sausage until no longer pink, breaking it into small pieces.
- Add goat cheese to the skillet and cover for 1 to 2 minutes. Stir until melted and combined.
- Fill each mushroom cap with the turkey mixture.
- Drizzle mushrooms with remaining olive oil and season if desired.
- Roast for 10 to 12 minutes, until slightly browned around the edges, then serve.
Serving Idea: Serve these as an appetizer, side dish, or party food.
