Easy Beef Stuffed Peppers

These easy stuffed bell peppers are filled with seasoned ground beef, rice, onion, carrot and tomato sauce. Prepare the peppers and filling ahead of time if desired, then bake them when you're ready for dinner.

Baked stuffed bell peppers filled with beef, rice and vegetables

Ingredients

  • 6 bell peppers
  • 1 onion, grated or finely chopped
  • 1 carrot, peeled and grated
  • 1-2 tablespoons oil
  • 1 pound ground beef
  • 2 cups cooked rice
  • 1/2 cup tomato sauce
  • Salt and black pepper, to taste
  • Sour cream, for serving, optional

Directions

  1. Preheat oven to 350°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes. You can also cut the peppers in half lengthwise for smaller portions.
  3. Bring a large pot of water to a boil. Carefully add the peppers and boil for several minutes to begin softening them. Drain well and arrange in a baking dish.
  4. Heat the oil in a large skillet over medium heat. Add the onion and carrot and cook for 2-3 minutes.
  5. Add the ground beef and cook, breaking it apart as it cooks, until completely cooked. Drain excess grease if needed.
  6. Stir the cooked rice and tomato sauce into the beef mixture. Season with salt and black pepper to taste.
  7. Spoon the beef and rice filling into the prepared bell peppers.
  8. Bake for 30-35 minutes, or until the peppers are tender and the filling is hot throughout.
  9. Serve warm with sour cream, if desired.

Teaching Tip: This is a good recipe for practicing reading through all the steps before beginning and organizing ingredients ahead of time.
