Stuffed Peppers

Ingredients

  • 6 peppers
  • 1 onion
  • 1 carrot
  • 1 chicken bouillon cube
  • 2 cups rice
  • 1 lb. ground beef
  • 1/2 cup tomato sauce

Directions

  1. Preheat oven to 350 degrees.
  2. Bring a pan of water to a boil. Place peppers cut in half lengthwise, or whole with tops cut off and seeds removed, into the water. Boil several minutes, then drain and set aside.
  3. Add 1 to 2 tablespoons oil to a saucepan.
  4. Grate 1 onion and 1 peeled carrot into the oil. Saute for 1 minute.
  5. Add 2 cups rice and 1 bouillon cube. Stir several minutes until the rice turns glassy.
  6. Stir in 2 cups of water. Turn to medium-low and simmer with a lid on.
  7. In a separate bowl, combine 1 lb. uncooked ground beef and 1/2 cup tomato sauce.
  8. Add in the rice mixture and stir to combine.
  9. Stuff the peppers and bake at 350 degrees for 45 minutes to 1 hour.

Teaching Tip: This is a good recipe for practicing reading through all the steps before beginning and organizing ingredients ahead of time.
