Ingredients

  • 1 lb boneless pork, cut into cubes
  • 1/4 cup vinegar
  • 1 clove garlic, minced
  • 2 to 3 cups rice
  • 1 large can pineapple chunks or 1 fresh pineapple cut into chunks
  • 2 tablespoons sugar
  • 2 tablespoons soy sauce
  • Green pepper, cut in chunks

Directions

  1. Brown pork in oil in a skillet.
  2. If using canned pineapple, drain the pineapple and reserve the liquid.
  3. Add the pineapple liquid, vinegar, soy sauce, garlic, and sugar to the pork and stir.
  4. Bring to a boil and add peppers.
  5. Reduce heat and cook covered for 15 minutes.
  6. Stir in pineapple chunks and serve with rice.
