Soft,
spiced pumpkin truffles made with crushed cookies,
pumpkin purée, and warm cinnamon flavor. These
no-bake treats are perfect for fall, Halloween, and
Thanksgiving cooking with kids.

Ingredients
- 2½ cups vanilla
cookies, crushed
- 1 cup toasted
almonds, finely chopped
- ½ cup powdered sugar
- 2 teaspoons ground
cinnamon
- 6 oz semisweet
chocolate chips
- 1 cup pumpkin purée
- ⅓ cup apple juice
Instructions
- In a medium
bowl, combine crushed cookies, chopped almonds,
powdered sugar, and cinnamon.
- Stir in
chocolate chips.
- Add pumpkin
purée and apple juice. Mix until fully combined.
Using clean hands makes mixing easier.
- Roll mixture
into small balls.
- Place truffles
on wax paper or a lined cookie sheet.
- Chill for
several hours until firm.
Optional Coating Ideas
- Melt additional chocolate chips and dip
chilled truffles
- Roll in powdered sugar for a “pumpkin spice
snowball” look
- Roll in extra chopped almonds

Notes
Leaving out the apple juice
will make the truffles set faster. You may also
add 1–2 tablespoons of butter to help the mixture
firm up more quickly in the refrigerator.
