Ingredients

  • 2 medium zucchini, spiralized into noodles (zoodles)
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • 2–4 eggs
  • Salt and pepper to taste

Instructions

  1. Spiralize zucchini into noodles using a spiralizer.
  2. Melt butter in a skillet over medium heat.
  3. Add minced garlic and cook for 1–2 minutes until fragrant.
  4. Add zucchini noodles and sauté several minutes until slightly tender but not mushy.
  5. Divide zoodles into sections and shape each into a nest.
  6. Crack one egg into the center of each nest.
  7. Cover skillet and cook until egg whites are set and yolk reaches desired doneness.
  8. Season with salt and pepper and serve warm.
