This easy BBQ beef combines barbecue sauce with apricot preserves, Dijon mustard and brown sugar for a sweet and tangy slow cooker roast. Shred or slice the finished beef and serve it as a main dish or pile it onto buns for BBQ beef sandwiches.
Ingredients
3 pounds top round beef roast
1 cup BBQ sauce
1 jar apricot preserves
1/2 cup diced bell peppers
1 tablespoon Dijon mustard
2 teaspoons brown sugar
1 medium onion, sliced
Directions
Place the beef roast in the slow cooker.
Add the BBQ sauce, apricot preserves, bell peppers, Dijon mustard, brown sugar and sliced onion.
Cover and cook on low for about 8 hours, or until the beef is tender.
Remove the beef from the slow cooker and let it rest briefly.
Slice or shred the beef, then stir or spoon some of the BBQ sauce mixture over the meat before serving.
Serve as a main dish or spoon the BBQ beef onto buns for sandwiches.
