Black Bean Burgers
These budget-friendly black bean burgers are
filling, flavorful, and a smart meatless dinner option
for college students.

Ingredients
- 2 tablespoons vegetable oil
- 1/2 cup bread crumbs
- 1 large egg, lightly beaten
- 1 (15-ounce) can black beans, rinsed and drained
- 1 clove garlic, minced
- 1 onion, finely chopped
- 1 stalk celery, chopped
- 1 tablespoon cumin
- Salt and pepper to taste
Directions
- Preheat the oven to 375°F. Line a rimmed baking
sheet with foil and lightly coat it with oil.
- In a skillet, heat the oil over medium-high heat.
Add the onion and celery and cook until softened.
- Add the garlic and cook for 1 minute more.
- In a bowl, mash the black beans into a thick
paste.
- Stir in the cooked vegetables, bread crumbs,
cumin, egg, salt, and pepper.
- Shape the mixture into 4 patties and place them on
the prepared baking sheet.
- Bake for about 10 minutes per side, or until firm
and set.
- Serve on buns with lettuce, tomato, and onion if
desired.
Money-saving tip:
Dried beans are often cheaper than canned beans,
especially when cooked in batches and frozen in
portions.
